Chicken Chorizo Sheet Pan Dinner

Who doesn’t love a sheet pan dinner? Only one dish to wash and only one to watch as well. This dish is perfect. It has some spice from the chorizo, tang from the olives mixed in with the sweet peppers and flavorful chicken.

2020 was not a good year for my goals, since its the new year I started off with a new set of resolutions which include getting back into meal prepping this year. I discovered this dish while looking for easy meal prep ideas. You can double the recipe to prep for more than one person, or eat the whole thing for a family dinner.

I personally love the flavor of chorizo and if you do too check out this Chorizo Chili recipe, it’s a family favorite! If you aren’t in love with the heat or flavor of chorizo, you can sub the sausage for andouille sausage or kielbasa.

The lemon is the real OG in this recipe though! do not miss it! it makes the flavor fresh and pairs perfectly with the dish. If you don’t have fresh lemon use the lemon juice squeeze bottles. I always keep the lemon and lime juice in the fake citrus bottles on hand just in case for any recipe.

Ingredients

3 large chicken breasts

2 chorizo sausages

4 peppers (I used 1 red, 1 green, 1 yellow and 1 orange I love the colors all together but you can use your favorite)

2 cups of petite potatoes (cut in 4ths)

1 onion

1/2 c olives (I chose green but this would also be delicious with greek olives)

2 Tb minced garlic

1 Tb oil of choice ( I like avocado oil or olive oil)

2 Tb paprika

3 Tb garlic salt

lemon slices

cilantro for garnish

Directions

Preheat oven to 375 degrees. Dice the chicken into 1 – 2 in cubes, and the chorizo into 1/2 slices. Spray a pan with light oil, the chorizo will let out enough grease for the pan the light spray keep the potatoes from sticking. arrange the chicken, potatoes and chorizo on the pan. make everything in one layer and leave room for veggies, use a second pan if you need to. season with salt and pepper. Bake in the oven for 10 minutes. Cut the peppers and onion, toss in a bowl with garlic, seasonings and oil. Add the veggies and olives to the pan after it has cooked part way. mix together to disperse the seasonings. cook for another 15 to 25 minutes or until the chicken and potatoes are cooked thoroughly. squeeze a lemon wedge over each serving, top with cilantro and serve with rice. or make up your meal prep boxes, and enjoy!!
