Minnie Mouse Cupcakes

Isn’t it every little girls dream to be Minnie Mouse?! She is cute, sweet, and Mickey sure does love her! So it is no surprise that 9 out of 10 little girls in my family have had a Minnie themed birthday party. I had one, my cousins all had them, and now this year my little sister had one! Over the years I would say that we have mastered the Minnie theme and my favorite part is the cupcakes!

Minnie Mouse cupcakes are so super simple and take no time at all to put together. And they taste great! If you need something easy for a kids birthday party, this is such a great idea. You can use any cake batter you like but I included an easy recipe below if you want to give it a try!

Ingredients

1 cup cocoa powder

¾ cup flour

1 ¾ teaspoon baking powder

1 ½ teaspoon espresso powder

1/3  teaspoon salt

2/3 cup butter, melted

¾ cup apple sauce

2 tablespoons Anthony’s Gluten Free Sweetener

4 large eggs

1 ½ tablespoon vanilla extract

  1. Preheat oven to 350
  2. Mix dry ingredients in one bowl: cocoa powder, flower, baking powder, espresso powder, and Anthony’s sweetener
  3. Mix wet ingredients in a separate bowl: butter, applesauce, eggs, vanilla
  4. Slowly mix dry ingredients into we ingredients until combined
  5. Pour into muffin tin (Use red or black cupcake liners!)
  6. Bake for 25 – 28 minutes, test with toothpick
  7. Once done; pull out of oven and let cool

To make the Minnie Mouse Effect

  1. While cupcakes are baking use melted white chocolate or candy melts to create red bows with white polka dots
  2. Cut Oreos evenly in half
  3. Make a white frosting (We used a basic whipped cream frosting!)
  4. Once cupcakes have cooled swirl the frosting on top
  5. Place two halves of an Oreo onto each cupcake to look like ears
  6. Stick a bow in between the ears!
