Quick & Easy Copy Cat Cafe Rio Creamy Tomatillo Dressing

Hello, my name is Brittany, and I am a Mexican food addict. Tacos, burritos, taco salad, enchiladas, tamales, rice, beans, salsa, chips! Is there anything better? I think not. And while I cook many of these things at home, I also love that we have fast food restaurants that meet the expectations of my cravings. One of my favorites? Café Rio. And while I love the big burritos, a salad with that tomatillo ranch dressing is my weakness!

In an order to save my bank account, I set out on a mission to make an identical Café Rio salad at home. The first thing I mastered? The dressing! And seriously, it is SO EASY!!!

Ingredients

1 oz jalapeno juice

1 oz chopped pickled jalapeños

3/4 cup milk

1 cup mayonnaise

1 packet of ranch dressing seasoning

1/2 bunch cilantro

Put all ingredients in blender and blend until cilantro and jalapeños are finely chopped. Dressing should have a creamy but runny consistency.

Place in refrigerator to chill and thicken for 30 minutes.

Serve over salad and ENJOY!!!

Also, if you like things a little spicier feel free to add extra jalapeños! We sometimes add double to give it a kick!
