I love Fall! Mostly because of Pumpkin Spice everything! And Pumpkin Pancakes are my favorite of all the pumpkin items! I remember learning how to make them my freshman year of High school in Home Ec. and I have been hooked ever since!

Pumpkin Pancakes is a great way to get your children to get the nutrients they need from veggies without even knowing that they are eating it! I love that my son is eating a vegetable for breakfast and has no idea! Parent: 1 Toddler: 0 … well at least until breakfast is over!

These pumpkin pancakes are fluffy and delicious! Eat them topped in whipped cream, maple syrup, candied pecans or even plain! They are tasty either way! Try mixing some semi-sweet chocolate chips in the batter… that one’s my favorite.

Pumpkin Pancakes


Ingredients

2 c Flour

1 tsp Salt

1/3 c Sugar

5 tsp baking powder

2 Eggs

1/2 c Olive Oil

2 tsp Pumpkin Pie seasoning

2 tsp Vanilla

1 1/2 c milk (or almond/soy milk)

1 c pumpkin puree

Directions

  1. in a bowl whisk together all of the dry ingredients
  2. once fully combined add in the eggs, milk, vanilla and oil
  3. last fold in the pumpkin puree
  4. cook on a griddle at 325° F
  5. recipes makes 14 four inch pancakes

  1. I don’t think we have tinned pumpkin here in the UK. Or I’m just rubbish at finding them, otherwise your recipe looks yummy!
