Homemade Strawberry Freezer Jam

Strawberries are best in the summer! Especially since I moved to Oregon where the berries are plentiful. While I was growing up we never bought store bought jam or jelly. My grandma would always make this Homemade Strawberry Freezer Jam. As a child I would it by the spoonful, It’s that good!

You can use this jam as a ice-cream topping or for a delicious PB & J. The PB & J option is my toddlers favorite! However he also loves it on his toast! 

The recipe is easy enough that your toddlers can help out too! With the constant stirring you will want someone to tag you out. Its a great recipe to get your kids involved in the kitchen and start their love of cooking! My son is my biggest helper in the kitchen, he loves to help me make pancakes, mac and cheese, cookies, and my all time favorite crockpot chocolate chip banana bread. 

Homemade Strawberry Freezer Jam


Ingredients

1 package of liquid pectin 

2 cups of crushed fresh strawberries 

4 cups sugar

2 Tbs fresh lemon juice 

Directions

Chop the stems off of the strawberries rinse and allow to completely dry. Use the chop or mince setting on your blender until the strawberries are in small chunks. measure out two cups and mix with the sugar in a bowl. Let sit for 10 minutes stirring occasionally. In a separate bowl mix the lemon juice and liquid pectin together until fully combined. Mix the two together and stir for 3 minutes or until the sugar fully incorporates. Pour into plastic storage containers leaving 1/2 inch gap at the top for expansion. Cover and let sit at room temp for 24 hours. At this point my grandma would add a small amount of wax to cover the top to prevent from ice crystals forming. This is optional but keeps the jam better longer. Then freezer for 1 year. You can move into the fridge when using a container or keep in the freezer. I prefer thicker so I use the freezer. Enjoy!
